I'm BACK!

Hello all again! Two years is a long time wouldn't you agree? Anyway update:
-Basketball season just ended! We got second in the tournament to a team who was undefeated. It was a close game!
-Soccer season has started, working on that almost 24/7! gotta run 6:45 mile to make the high school team, even to be a keep! (That's a goalie for those who don't know what a 'keep' is)
-Almost the end of 8th grade, got my first non-4.0 last term :(, but this term I do have one, so all is good!
-Pintrest has taken over my life! So many good ideas and great recipes! ugh!
-I have decided I am going to get my associates degree in high school and finish my bachelors in an actual college, hopefully Harvard or Stanford will accept my high school associates :)
-Favorite subject: French and English... HAHA, that's funny. com'mon, laugh with me here :D
-Due to my loving of baking, I feel that my dream job is to become a pastry chef. Go to Le Cordon Bleu in Paris and open up a small cafe in the boulevards of Brittany France. Or Tahiti... hmmm.
-I'm going to make sure you all know how to cook in my new starting blog, okay? First, I wanted to share this recipe, its been egging at me for almost a month now and I haven't had the guts to post it.

Whiteout Cocoa
8-10 servings
6 cups skim milk
2 cups fat-free half and half
12 oz. white choco chips
1 Tbps. vanilla
Whipped cream and non perishables for toppings

Directions:
Place skim milk, half and half, vanilla and white choco chips in a large pot, place over medium heat. Stir occasionally, (but don't leave! Chocolate can burn the bottom of your pot and its a pain to get out!) until chocolate chips begin to melt, reduce heat to medium-low.

Cook, stirring frequently, until hot and chips are melted. Divide mixture into mugs with whipped cream and sprinkles. Serve immediately and enjoy!

Sorry!!!

Its almost Christmas and I haven't posted anything!!! I feel so bad!!! So here's what you missed. Yesterday, my parents went to go see Dana Carvy, and left me with my Grandma and Grandpa, we also had a Christmas party at my Great grandmothers house, which was great! I personally think 7th grade STINKS!! I strive to get a 4.0 (Which I have successfully completed last term), But I've got a 3.7 right now... oh well. I'm successful in my Babysitting buis, YES I DO BABYSIT!!! Thats is about the only thing that came to mind. OH, I am going skiing on the 27th with my friend by the name of Emily Dodge, she is one of my best friends, so dont make any plans for me that day!
I am prepareing for a rough and tough season in Basket Ball and Indoor Soccer, my indoor games are from the 27th to the 1st, every day, UNKNOWN TIMES!!! I will post the times when I get them. My basket ball games are from late January to beginning March, and again I will post times later, and days.

Everything latley

Hi guys! I am so sorry I haven't written on this in so long! I feel so bad! I promised my Grandma Jenkins I would at least put out a recipe for her, so here's your recipe Grandma!

Glazed Cinnamon Almonds
1 egg white
Pinch of salt
1 1/2 pounds (about 3-3 1/2 cups) almonds
1/2 cup sugar
1 teaspoon cinnamon
Butter

In medium bowl, beat egg white and salt until soft peaks form. Pour the nuts into the bowl and stir to coat well. Combine the sugar and cinnamon, and sprinkle over the almonds. Mix well.

Turn the mixture out onto a buttered shallow baking pan, Like a jelly roll pan or cookie sheet, and spread the nuts evenly. Bake at 300 degrees, stirring occasionally, until crisp, about 45 min.

Ok I've come up with a great idea for my blog every Sunday or Monday I will write a menu a breakfast, lunch, and dinner and maybe a dessert, even if it sounds to me like its disgusting.

This weeks menu:

Breakfast: Berry-licious Pancakes
1 egg
1 cup all- purpose flour or whole wheat flour
3/4 cup milk
1 table spoon granulated sugar or packed brown sugar
2 tablespoons vegetable oil
3 teaspoons baking powder
1/4 teaspoon of salt

Your choice: 1/2 cup fresh or frozen ( thawed and well drained) blueberries or
1/2 cup fresh or frozen ( thawed and well drained) raspberries or
1/2 cup fresh or frozen ( thawed and well drained) blackberries

Cooking spray
Butter or margarine, if you like
Maple-flavored syrup, if you like
blueberries and raspberries, if you like

1. Crack the egg on the side of the bowl, letting egg slip into bowl. Beat with fork until egg looks foamy. Add the flour, milk, Granulated sugar, Vegetable oil, baking powder, and salt. Beat with fork until mixture is smooth. ( For thinner pancakes, stir in 1 to 2 tablespoons milk.) Stir the ( if you choose) Blueberries, Raspberries, or blackberries into the batter.

2. Spray the unheated griddle or electric skillet with the cooking spray. Heat griddle over medium heat, or electric skillet to 375 degrees F ( To test griddle or skillet, sprinkle with just a few drops of water. If bubbles jump around, Heat is just right.

3. For each pancake, pour about 1/4 cup of batter from the measuring cup onto hot griddle or skillet. Cook for about 2 minutes or until pancakes are puffy and dry around the edges. Turn pancake over, using the pancake turner. Cook for about 2 more minuets or until bottoms of pancakes are golden brown.

4. Serve pancakes with butter, maple-flavored syrup and berries, if you like.

Lunch is Join-the-Club Sandwiches
ingredients:
12 slices bread, toasted if you like
2 medium tomatoes, if you like
mayonnaise or salad dressing
1/3 cup bacon flavor bits or chips
8 lettuce leaves
3/4 pound sliced cooked turkey

Utensils:
toaster, if you like
paper towels
cutting board
sharp knife
table knife
Dry-ingredient measuring cups
measuring spoons
16 toothpicks

1. Toast the slices of bread, if you like. Wash the tomato's in cool water ( if you like.) Pat dry with the paper towels. Cut each tomato into 6 slices on the cutting board, using the sharp knife, if you like.

2.Spread mayonnaise evenly on 1 side of each bread slice, using the table knife. Sprinkle about 1 teaspoon of the bacon bits on top of each slice of bread.

3. Put 1 lettuce leaf and 3 slices of tomato on each of 4 slices of bread. Top each with another slice of bread, with bacon bits on top. Put some turkey on top of the bacon bits. Put another lettuce leaf on top of the turkey. Top each with a third slice of bread, this time with the bacon bits side down. From bottom to top, your sandwich should look like this: bread, mayonnaise, bacon bits, lettuce, 3 slices of tomato, bread, mayonnaise, bacon bits turkey, lettuce, bacon bits, mayonnaise, bread.

4. Cut each sandwich diagonally in half on the cutting board, with the sharp knife. Then cut these triangles in half again to make smaller triangles. Poke a toothpick in the center of each triangle to hold the sandwich together. Before eating make sure you remove the toothpicks!

Dinner: Mini meatloaves
ingredients:
1 small onion
1 pound lean ground beef
1/2 cup plain dry bread crumbs
1/4 cup mink
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon Worcestershire sauce, if you like
1 egg

utensils:
Paper towel
Cutting board
Sharp knife
Dry ingredient measuring cup
Measuring spoons
Large mixing bowl
Wooden spoon
Rectangular class baking dish (13 x 9 inch; 3 quart)
Ruler
Table knife
Meat thermometer
Pot holders
Pancake turner

1. Peel the outside layer of skin from the onion. Wash onion in cool water. Pat dry with the paper towel. Cut onion into very small pieces on the cutting board, using the sharp knife ( you need about 1/4 cup).

2. Heat the oven to 400 degrees F. Put the onion, ground beef, Bread crumbs, milk, salt, pepper, and Worcestershire sauce (if you like) in the bowl. Crack the egg on the side of the bowl, letting egg slip into bowl. Stir with wooden spoon until mixed.

3. Put the mixture into the baking dish. Shape mixture into 9 x 3-inch rectangle, using your hands ( use the ruler to measure). Cut mixture in half the long way, using table knife. Cut into 4 rows the short way. You should wind up with 8 meat loaves, Each about 2 inches long and 1 1/2 inches wide. Separate loaves a little bit with knife.

4. Bake uncovered for 25 minutes. To check if meat loves are cooked, stick meat thermometer into one loaf in the center of dish. Watch the line until it stops moving. When the line stops at 165 degrees F, the loaves are done. if it doesn't go that high, bake loaves a little longer and test again with thermometer. Use the pot holders to take the dish out of oven- it will be hot and heavy. Use the pancake turner to carefully take loaves out of dish.

dinners calories for one serving is 280

lunch calories for 1 sandwich is 410

Breakfast calories for 3 pancakes 33o

ok and dessert is the cinnamon almonds so thanks and listen next week!

Shelby's Castle

Shelby built a castle for her middle ages segment in school. She spent about 3 weeks building it out of salt dough hand-formed squares. Unfortunately, I forgot to take a picture prior to her taking it to school, so it looks a little hammered, but wanted to share a picture of it so she can show off her hard work.
Not only did she build the castle, she also cut up some old barbie clothes and made a costume for a "noble woman" and dressed up as a jester for the middle ages feast they had on 10/13. What a fun thing to do for school.

Lakes, Reservoirs, And Exercise

Well, today we (Me, Chantel, Aaron, Gretchen and yes Bailey) went to Strawberry Reservoir and caught 4 fish and my favorite part was getting to jump into the water while my mom and dad fished. It was so fun. Name some of your fave lakes and a history fact, fun fact, or a fun, scary, funny thing that happened to you there. Now for Exercise i have nothing to do for exercise but to ride my bike (which i do every day), run (which I'm not allowed to go further than our cul-de-sac unless its for friends), friends ( i only have 2 positive friends), and last to play with my sister ( i do every day). Please give me some ideas how you stay fit!!!!

School, Pain, and Fun

Hey Every one its Shelby here well its late and I had nothing to do so I thought I would post something new. OK for starters me and Gretchen are outta School, YA!!!!! Finally school ends.
Well the next thing is me an my friend were playing and we decided to go on a hill with only our scooters no brakes allowed ( that we weren't suppose to use anyway) . She went down and in the middle she put her foot down and put her weight on it and while the other foot was on the scooter she fell forward and made 2 big gushes in her knee, and on in her elbow ( OUCH!!!!). We (mainly I) screamed for help and so that's the big PAINFUL story.
Well it's summer and that means Swimming I LOVE swimming and hopefully my mom and my Aunt, will agree to let me and Gretchen come over for 1 day and 2 nights. They live near an Swimming Pool (Halaluya). One sad secret is I DON'T KNOW HOW TO SWIM!!! I'm 11 i started swim lessons but never finished them. I gotta learn how to swim!!

Well that's all for now folks!
